May is Celiac Awareness Month. At our house every day is Celiac Awareness. When we first went gluten free 6 years ago, many people accused us of jumping on a fad. It’s no fad for my daughter Ryan. We read the ingredients on every processed food that we buy. When we go out to eat we talk to the chef to find out what is safe for her. If Ryan eats gluten she gets a horrible rash on her legs, she has large amounts of blood in her stool and experiences joint pain, diarrhea and stomach cramps.It took years to discover what was wrong with her.
Gluten is a protein that is found in wheat, barley and rye. Because oats are often grown along with wheat as well as processed in the same facilities they are not safe to eat either. Those with celiac who go undiagnosed are left open to other diseases including cancer. The only treatment at this time is to eliminate gluten from your diet.
Explore Cuisine sent us a selection of their gluten free bean pastas to try. These pastas are made from beans only and are high in protein. I made Pork Lo Mein with the Organic Edamame Spaghetti. 22 Grams of protein in each serving! The pasta has a great texture and does not fall apart or get mushy when cooked.
