  • 1 box Explore Cuisine Chickpea Fusilli (cooked according to package directions)
  • 8 oz soft tofu drained, patted dry and sliced into 4 pieces
  • ½ cup vegan sour cream
  • 1/2 cup vegan cream cheese room temperature
  • ¼ cup maple syrup or agave
  • ½ cup granulated sugar
  • 1 apple peeled and grated
  • ¼ cup golden raisins
  • 4 tbsp vegan buttery spread melted
  • 1 1/2 tsp vanilla
  • 1 ½ tsp Kosher Salt
  • 1 tsp cinnamon

Instructions
  1. Prepare a 9 x 13-inch casserole dish with non-stick spray. Set aside.
  2. Preheat oven to 350 degrees Fahrenheit.
  3. Cook rotini according to package directions. Drain.
  4. In a bowl, mash the tofu with sour cream and cream cheese until smooth.
  5. Add maple syrup, sugar, apple, raisins, melted butter, vanilla, salt and cinnamon. Stir until evenly coated.
  6. Add pasta mixture to prepared dish.
  7. Bake for 35 minutes or until top begins to brown. Remove from oven. Let sit for about 10 minutes before serving.
