  • 1 box explore cuisine red lentil penne (cooked according to package directions)
  • 3 tbsp olive oil
  • 3 garlic cloves finely chopped
  • 1/2 tsp dried red pepper flakes
  • 1 box strained tomato sauce
  • 1/2 cup dry white wine
  • 1 cup Basil chiffonade
  • 3/4 cup grated pecorino romano (plus more for garnish)
  • Kosher salt and freshly ground black pepper to taste

Instructions
  1. Bring a large pot of water to a boil. Cook Red Lentil Penne according to package directions. Drain, set aside and reserve 1 cup of pasta water.
  2. In a large sauté pan over medium heat, add olive oil and garlic. Cook until fragrant.
  3. Add hot pepper flakes and cook for about 1 minutes.
  4. Stir in strained tomato sauce. Allow to cook for 5 minutes, stirring occasionally. Stir in white wine. Cook for 5 more minutes.
  5. Toss in penne, turn heat off, stirring add basil and pecorino until all pasta is evenly coated. To loosen sauce, add a small amount of reserved pasta water until desired consistency is reached.
  6. Garnish with more cheese and serve.
