  • 1 8 oz box chickpea spaghetti cooked
  • 1/4 cup red pepper sliced into batons
  • 1/4 cup orange pepper sliced into batons
  • 1/4 cup yellow pepper sliced into batons
  • 1/3 cup zuchini sliced into half-moons
  • 1/3 cup shitake mushrooms sliced
  • 1/2 red onion sliced into rings
  • olive oil
  • salt & papper
  • Dressing:
  • 1 tbsp olive oil
  • 1 tbsp toasted sesame oil
  • 1 tbsp soy sauce (or gluten free tamari)
  • 1 tbsp seasoned rice wine vinegar
  • several grinds Black pepper

Instructions
  1. Toss vegetables lightly with olive oil, season with salt & pepper. Roast in a 400 degree oven on a baking sheet in a single layer until tender and slightly caramelized
  2. Whisk dressing ingredients together then toss with spaghetti and vegetables. Season with salt & pepper. Garnish with parsley and green onion.
