Fettuccine with Coconut Ginger Butternut Squash

Ingredients
  • 1 box Explore Cuisine Black Bean Sesame Fettuccine (cooked according to package directions)
  • 1 box sesame oil
  • 2 garlic cloves grated
  • 1 (1-inch) piece of ginger peeled & grated
  • 1 can coconut milk
  • 1/4 cup soy sauce
  • 2 cups water
  • 1/2 cup canned butternut squash puree
  • 2 scallions sliced on a bias
  • 1/2 bunch cilantro
  • 1/4 cup slivered almonds
  • Kosher salt and freshly cracked black pepper to taste

Instructions
  1. In a high sided saute pan or braiser over medium heat, add sesame oil and grated ginger and garlic. Stir.
  2. Add coconut milk, salt to taste, water and soy sauce.
  3. Bring to a boil. Once boiling, add fettuccine and allow to cook for 8-10 minutes. The liquid should reduce, creating a sauce.
  4. Once pasta is cooked stir in squash puree. Garnish with scallions, cilantro and almonds.
