  • Walnut Meatballs
  • 1 1/2 cups walnuts
  • 1 cup sun dried tomatoes
  • 1 tbsp olive oil
  • 1 tsp sage
  • 1 tsp fennel
  • 1/2 tsp thyme
  • 1/2 tsp rosemary
  • 1/2 tsp marjoram (optional)
  • pinch Black pepper (optional)
  • pinch cayenne pepper
  • pinch real salt
  • fresh basil for garnish

Instructions
  1. Cook the pasta according to packet instructions.
  2. Add all walnut meatball ingredients to a blender and blend until well combined. Some chunks are ok. Roll mixture into balls, about 20
  3. Serve pasta and walnut meatballs in bowls
  4. Garnish with basil
Recipe Notes

Add a cooked tomato sauce if you like.

If you are pressed for time, skip rolling them into balls and just add the walnut meat mixture to the Fettuccine
