Ingredients
  • 1 box Explore Cuisine Chickpea Fusilli (cooked according to package directions)
  • 2 tbsp olive oil
  • 1 yellow onion (thinly sliced)
  • 2 garlic cloves (smashed)
  • 1 Red Bell Pepper (thinly sliced)
  • 1 orange bell pepper (thinly sliced)
  • 1 yellow bell pepper (thinly sliced)
  • 1/2 cup balsamic vinegar
  • 1/4 cup fresh basil (torn)
  • 1/4 cup freshly grated parmigiana cheese (plus more for garnish)
  • Kosher salt & freshly ground black pepper

Instructions
  1. Bring a large pot of water to a boil.
  2. Cook Chickpea Fusilli according to package directions. Drain, set aside and reserve 1 cup of pasta water.
  3. In a large sauté pan over medium heat, add olive oil and onion. Cook until translucent about 5 minutes.
  4. Add garlic, bell peppers and season. Turn to medium low, and cook for 20 minutes until caramelized.
  5. Turn heat up and deglaze with balsamic vinegar. Allow to cook for 5 minutes until reduced and syrupy.
  6. Turn off heat, add in fusilli and stir vigorously. Add in basil and freshly grated parmigiana.
  7. To loosen sauce, use a small amount of the reserved pasta water to achieve desired consistency. Garnish with more cheese and serve.
